I accidently subscribed to an app on my phone and then cancelled right away, but I'm afraid they will charge my account. How do I delete this from happening?

If you subscribed, and unless it had trial period, you should be charged - stopping a subscription only stops its auto-renewal, it doesn't result in the cancelation of the current subscription term nor stop and pending charge.

If it wasn't a trail subscription then purchases are considered final as you know, but you could try the 'report a problem' page to contact iTunes Support and see if they will refund you as a one-off : http://reportaproblem.apple.com

Or you can try contacting iTunes Support via : http://www.apple.com/support/itunes/ww
