Well with the help of Canon tech support on the phone to my amazement we got the scanner function to work. Rather than risk giving the wrong step by step instructions I can say that tech support was very particular of which folders to move to trash before restarting. Then at the downloads page for the tr8520 there is a drop down menu for os x versions including Big Sur (which I had managed not to notice before). Once the new driver for the IJ Scan Utility Lite was installed I left the printer window (on the printer not the computer screen) at home and used IJ Scan Utility Lite to operate the scanner. Note that there are a few options that tech support had me check such as save and check scan. Also if you don't use the auto doc feeder on the printer but manually place you doc on the glass surface you need to choose platen.

Hello Dexter5772,

Welcome to Apple Support Communities. We understand that your Mac is having some issues connecting to your scanner after a recent macOS upgrade.

We recommend starting with the steps from Solve printing problems on Mac which can help with many printer issues. Since this started after a macOS upgrade, there may be a corresponding firmware update needed for the scanner. We found the following Canon page where you can check for updates: Canon

Resetting the printing system may help if this continues. Check out Reset the Mac printing system to solve a problem.

Take care.
