How do I move around the new control center and time icons?

Cmmd+ clicking the aforementioned icons no longer allows me to move them around on the menu bar. How do I get around this? I prefer a very specific layout of my menu items. Furthermore, how do I make it so the time is just that--the time? I.e. not the notifications button.

Big Sur ruined my Mac (surprise surprise) so I'm trying to get it back to what it once was.
