In System Preferences > Keyboard > Text panel, click the + button to add a replacement string that is two or more characters in length. So for this multiple bullets example:
When you tab over from the Replace field to the With field, press control+command+space bar to launch the character viewer. In the character viewer search field, enter bullet, and then choose the Unicode U+2022 bullet. Double-click on that bullet for each character that you want inserted into the With field.
Ensure that the following is selected: Pages Edit > Substitution > √ Text Replacement.
Now, in Pages, whenever you type mb* you will see a floating panel below your text. To accept press any character, and reject, press escape.
If you want different triggers for different repeating bullets, then instead of mb*, you might use mb3 for three bullets.
