It would seem you may have narrowed it down, however, I'm not confident that it is 100% the update. This could also be caused by an application that's not playing nice with Big Sur. Do you have a time machine backup? The reason I ask is you may benefit from re-installing macOS through recovery. This comes with the chance that you may lose your data(SO MAKE A BACKUP).
If the issue persists after reinstalling, I would suggest checking your applications are all up-to-date and have no known issues. If you're unable to find the cause: Erase your hard drive(VERY LAST RESORT) and then reinstall macOS. Proceed to then install your third-party applications one at a time until you either get the same issue or nothing happens.
