Shutdown and connect to charger. Hold Power Button / Touch ID Button ( same function ) for 10 seconds and perform this action 3 times in a row. Restart on Normal Mode and test the Mic.
Sorry the issue has returned. If I were you - I am not - would take it back and reproduce the Issue to them. Have them attempt to reproduce the same thing. If they can - they may replace the computer. But, be sure they are the ones to reproduce what you have already shown them. Now, the responsibility is on them to fix or replace / exchange.
Is the Mic not working in Software Other than in FaceTime or in some Third Party Application like Zoom etc.
If not working in FaceTime - suggest having the computer looked at by Apple Authorized Service Centre. Or - if under the 14 day Return Policy - return to Apple.
If in Third Party Application - trouble shoot from the Developers Web Site
Technical reason beyond me. It is more of observation from many others with similar issue and solution. On the Intel MBA - that I know ** M1 is too have definitive answer. For Intel p the SMC ( System Management Controller ) controls builtin functions like the Mic. As for your M1 MBA - believe this action you performed has resolve the issue and hopefully permanently.

The Most Important thing- it resolved the mic issue and you can enjoy the full features of the new machine.
If the Apple Authorized Service Centre checked and found no issues - then this issue must be the Third Party Application ( Non-Apple Application ).

Might be able to ask for Exchange if you have Apple Care Plus.
Use wrote " They tested the device and the problem persisted " are you saying they tested and they could not find a problem or they found a problem and just gave it back to you in that condition?

Unfortunately this morning the problem repeated itself. The microphone does not work again :(

I was in an authorized service center. They tested the device and the problem persisted. They saw nothing. 14 days have already ended. Can I return my laptop or exchange it for a new one?
I don't have Apple Care Plus.
The service center did not find the problem. But! There is a problem. I see her without tests.

ВНИМАНИЕ!!!! НЕ ПОДКЛАДЫВАЙТЕ ЧЕХОЛ ПОД НОУТБУК!!!! Иначе откажут микрофоны. Два раза в сервис носил макбук, переустановлял систему, на горячке всем мозг вынес. Думал что мне бракованный макбук попался. Оказались всему виной магниты в чехле. Я мак ложил на чехол, чтобы избажать царапин, а магниты в чехле блокировали работу мака. Поднял мак над чехлом, все заработало. Может кому-то мой отзыв будет полезным сэкономит время и нервы. Сам чехол очень хороший, считаю лучшим для макбука, очень качественно сделан, всем рекомендую, но не стелите его под ноут, будут проблемы в работе устройства.
