Do these iPad mini and iPhone8 upgrades have something to do with protecting my passwords? More and more often companies are deeming my stored passwords as invalid.

The update has nothing to do with your login IDs or passwords used with other accounts and services. It had to do with issues in WebKit that could have been used by websites to execute malware. The patch was to fix a bug in WebKit related to memory corruption on devices.
The recent iOS/iPadOS 14.1.1 update was a security update, but does not impact your website credentials stored in your Keychain.
