So I have been hopelessly looking for the "Send later" feature on my mail button.
After a quite extensive research on the web, it seems that this feature does exists in previous version.
It seems it has disappeared for no logical and possibly relevant reason, as this feature is extremely useful.
Does anyone know how to restore it? or activate it?

The Point is missed - there is a Third Party App involved and as such Not Builtin to Apple Mail. Mail Butler is the App if what I heard in the Video
You are correct in the Feature does not exist in Big Sur nor Catalina nor Mojave etc. It is just a feature that has not existed in Apple Mail.
If desired - Send Apple your Feedback and future developments.
