When I turn on my iPhone, the apple sign appears for a moment then disappears, then, I have to press again the button in order to start properly... Why does it happen??
No, you don’t have to press start again. Just wait and the phone will complete the startup process in 15-20 seconds.
It appears to be a cosmetic bug, and reliable rumors say that it will be corrected in iOS 14.5 when it is released, which will probably be soon. There has been no official (or unofficial) word from Apple, however. (And I have asked, with no response).
