Is the Apple Watch 2. Secure if it can’t receive latest security update
Apple Watch 2 cannot receive the latest security update. Are my apple products secure with the watch not updated

If you've updated the watch 2 as far as it will go then you have made the watch as secure as the software will allow,to get the latest security updates you would require an apple watch 3 or higher.
