I need to make sure I have the latest version of an app.
However, when I got to the App Store and click on my profile icon, the app is not listed. What do I do to see what version this app is using?

When you click on your profile icon in the App Store, it shows you available updates.
If you pull down and then release, it refreshes the page.
If the app in question is not shown there, then it does not have an update available.. which implies that you have the latest version of the app.
This area does not necessarily list all your apps, just ones that have been recently updated.
Finding the version of an app might not be straight forward. iOS doesn't really tell you (not really it's job to know). AFAIK, it's up to the app developer to make that info available. So inside the app, you might find a settings/help/about/support area and hopefully the app version is listed there.
Some apps list their version information in Settings > [app name], at or near the bottom
Or, if you find the app in the App Store, go into the app's details.. they usually have the app version listed. Then you can assume that if it says 'Open' rather than 'Update', you have the latest version listed in these details
