I still have my phone but a different phone number and have had a different phone number going on 4 months now.
How do I remove the number I no longer have from the device it once was the number to?

You need to change/add the number on your Apple ID. After the change, allow up to 24 hours for the change to sync. Before trying to make the change, sign out of Messages/FaceTime on all devices/computers.
