I can back up my iPhone fine on my PC using USB, but when I try a USB-C, it senses the phone, but everything is greyed out. The usual, in the endless, idiotic war between Apple and Microsoft.

You must have the latest version of iTunes. Get it from the Microsoft Store or https://itunes.com.
Something wrong with your USB-C to USB-A adapter.
What model iPhone? Older ones use USB-A cable end.
There is no adapter. My Dell has a perfectly good USB-C port, and I purchased a brand new Apple USB-C charger.

Connect to a USB-C port on the PC. It probably has each type.
I am connecting to USB-C. It doesn't work for iPhone and iTunes. That is my point.
