My wife and I are seniors in Manhattan Beach California area and need to upgrade our iPhone 5.
We're looking at getting to iphone 12's.
We wanted to bring our phones in and have a genius or some assistant help us transfer our vital information from the old phones to the new phones.
Is that service available and would we need to leave the iPhone fives with you?

Yes, they should be able to help with that while you wait (however, there may be pandemic restrictions). You could also do it yourselves. See this link for reference. Even if the store does it for you, this will help you to understand the process:
