After a IOS update today, my audible app stops playing when my iphone screen goes into sleep mode. I've closed apps, rebooted phone and still having problem.

I have had the same issue and was able to bypass it by going to settings/Audible. Turn OFF Allow Audible to Access Media & Apple Music. Restart your audible app and now you can turn off you screen and use audible the same way as before the update.
It does do the trick but it drains the battery.

At least in ios 14.7.1 there is no such option
Im having same problem. I tried to do this today 12 Aug 2021. They had no idea about the issue. Im sick of it now.
