I have a charger with 2 ports; one is 2.1A the other 1.0 A. How do I know which to use for what device?
What devices use the USB AC 2.1 A and what uses the 1.0 A ?

Either will be fine, the 2.1 amp port will charge your phone faster. Your phone will only draw as much current as it needs, you can't damage it by using a higher amperage port.
PS. The output of a USB port is 5 volts DC, not AC.
