I just installed Big Sur on iMac. The font on my inbox messages look like emoji. If you bring up the email itself you can read it. My iCloud mail is fine. I have tried changing fronts, closing out email, rebooting mail, preference, Nothing seems to convert it to script. All mail boxes are the same emoji.
Any ideas?

What font is set for Mail Preferences > Fonts & Colors > Message list font? That will determine how your list of inbox messages will appear.
