Mouse glitching issue at random

I've been having some mouse issues for the past couple months. Seems to appear completely randomly, 1-2 times a day for an hour or so. It's a slow glitch, like it can't quite keep up with my hand. I'm a video editor so this is extremely annoying. I use a Logitech MX Vertical. I use the same mouse on my Macbook with 0 issues.

Coming here as a last resort. Please read below as I have tried numerous things.

  • I have tried different mice, Apple Mouse, old USB wired mouse, Logi mouse.
  • Since it happens with the wired mouse as well I have ruled out Bluetooth issues. I've also attempted using the mouse dongle with BT turned off. Directly plugged into computer and in USB Hub
  • I have tried different monitor settings, scaled vs default.
  • I have reset mouse settings on my Mac Mini
  • I have updated the OS, just recently today from Catalina to Big Sur with no change.

My only other tip is that the mouse seems to lag when my computer is working on visual processes: editing, Youtube etc. However that isn't 100%. It's happening right now and I only have Chrome, Finder and Mail open. Nothing strenuous.

Any help would be appreciated!

Mac mini 2018 or later
