Access to icloud back-up

I no longer have access to apple product how can I get access to my data from previous back-up

Apple Watch Series 3, watchOS 6

An iCloud backup isn't accessible or readable as individual files. It is designed to restore configuration to an Apple device. However, some things are not stored in a backup but are instead synced to iCloud if you set up iCloud to sync them. In that case some of them are available if you log into iCloud.com on a web browser and use the online apps to look at them. For example, if you were using iCloud to sync photos you can see the photos there in the Photos app and you can select which ones to download to a computer.
