Mail recipients

I just got a new imac with Catalina. In mail, it won't display the recipients of an email, just the sender. I know who the sender was (me!), but I need to se who each mail was sent to so it is easy to find again. Is there a way to do this? Why do they remove uselful functionality when they upgrade? Upgrades are supposed to be improvements!

There are different views in Mail—try changing this option

Mail>View>Column Layout try unchecking this for comparison.

In Column view— Control click in the Mail header area you have a contextual menu drop down to make changes:
