Just to confirm, do you subscribe to Apple Music? "If you subscribe to Apple Music, your music is transferred automatically to all your devices and no syncing is required."

"You can choose to sync your Mac and your device automatically whenever you connect them. To turn on automatic syncing, select General in the button bar, then select “Automatically sync when this [device] is connected.” You can find more information about that in the first link we provided in our initial reply.
