Welcome to Apple Support Communities. We understand that you want to make sure you can use your Epson scanner and printer with your new MacBook Air M1.

It looks like both products are compatible with Big Sur but you may need to download the drivers from Epson. We found drivers from Epson SureColor P6000 Standard Edition driver and Epson Perfection V700 Photo.

I looked at those drivers but they don't seem to be set up for "big Sur" or the M1 chip. Just thought Apple might be able to shed some light on the problem' I will contact epson to see if they know anything about it. Thanks
