Is it possible to change the email version on my MacBook, currently Big Sur v14.0? I used to love the layout for emails on my old MacBook, but now the headers are pale and not where they were before. I've carried on for months, thinking I'd get used to it but I still hate it.

Not without reverting to an older OS, but if that is a new Mac, you can’t.
You could try playing with some of the Accessibility System Preferences to increase the contrast or other settings.
