When changing my rings it does not give me the “next” option it just has “update” and that’s for the move goal only. Can you help?

Changing activity goals is only possible on Apple Watch Series 3 or later with watchOS 7.

That's because you have watchos6 or earlier and you can only change your move goal,this is watchos7;
