But to confirm, you have tried this: "Triple-click the Side or Home button, enter your Guided Access passcode, then tap End. Or if you turned on Touch ID or Face ID for Guided Access, double-click the Side or Home button." already?

And you've confirmed that the passcode used for Guided Access or the password entered is correct for the Apple ID that set Guided Access?

If you might have set the passcode and then forgotten it, force the iPhone to restart, and once it has restarted change the passcode in Settings > Accessibility > Guided Access > change the passcode. I expect this only works if there is a passcode set, and not if there's an Apple ID password set, and this also doesn't work if there's no passcode set.

What if my Iphone 12 is stuck on guided access. I tried everything. I did put in my password but it didn't ask me if I wanted to end the guided access.
