In the Apple TV settings, the only option (and it is checked by default) is Audio Output to TV Speakers. But the output is via HDMI cable to the A/V receiver. How do I change that?
The naming for the output is a bit unfortunate, as it actually means Default Audio Output: through HDMI. Which HDMI device that is (TV or receiver or soundbar), is beyond control of the Apple TV.

How do I get my Apple TV to output DDS?
There is no passthrough for audio on Apple TV. Apple TV offers four audio formats for wired (HDMI):
- Dolby Atmos (in Dolby MAT format), available in combination with the Auto format setting
- Auto (PCM Multichannel), uncompressed, up to 7.1 channels
- Dolby Digital 5.1 (re-encoded from source, fallback option for when Auto isn’t compatible with the setup)
- Stereo (downsampled from source, fallback option for two speaker setup and/or when DD5.1 isn’t compatible with the setup)
There is no upscaling involved (by Apple TV). If the source content is lesser audio channels, then the output will be lesser audio channels, and your AV receiver may detect that. Play 5.1/7.1/Atmos content to have more audio channels than stereo detected.
Wireless audio connections (bluetooth, AirPlay) between Apple TV and the audio system will be downsampled to stereo (except for HomePods 2018, which will do virtualization). In other words: you will want Default Audio Output: TV Speakers, for use with your Denon.
Strangely, when I look at Audio Format in the Apple TV settings it is Dolby Atmos.
