I added a Visa card to my apple wallet and when it comes to the verification process I only have the- "text message " option when I press next the following message is coming: "verification not available try again in a few minutes" any solutions? Couldn't find anything helpful online..
thinking maybe if I had the email option for verification it would've worked but its not showing

It looks like you're having trouble with Apple Pay and we can help.
The verification process takes place over the internet. The first thing we recommend doing is turning off Low Power mode and trying again. Low Power mode can interfere with syncing and other services.
You can also try verifying again using cellular data instead of Wi-Fi.
