Screenshots Not working - Big Sur

Whenever I try to take a screenshot I get this message (2x actually if that means anything.

I've tried permissions, I've changed the OS (this problem started for me when KI upgraded to Catalina, and has followed me to Big Sur).

"Your screenshot can't be saved. Cannot write file to destination"

This problem is driving me nuts, I really need this functionality for work, using preview to screenshot is not a good solution, please help.

Type Shift + Command + 5

Click on the Options drop down

See where the screenshots are attempting to be stored

Cancel out of the screenshot, navigate to the destination, select it and then type Command + I to Get Info about the destination, make sure the permissions for the destination are set correctly for your user account.
