HP printer J110 series will not update to Big Sur on Mac OS. No person to talk to at HP, but apple says they must update their software. what should I do?

Generally speaking, before carrying out any tests with printer drivers, make sure that you have several backup copies of important files (such as photos). There is always a certain risk that data could be lost.
It may not change anything, but you could try resetting the printing system and re-adding the printer. Check whether the operating system automatically suggests a compatible driver.

Interesting to note is also that there is an HP Printer Drivers v5.1 for macOS (Dec 11, 2020) download from Apple (https://support.apple.com/kb/DL1888?viewlocale=en_US&locale=en_US). The archived supported printers article has a reference to an HP Deskjet 1000 J110 series 2.3.2 driver. The same is true here; it may not work at all with Big Sur, but if nothing else helps, it could perhaps be worth testing.
Enter the following into a Google search from your browser where you replace everything in angle brackets with what it says:
HP <exact printer model name> drivers
And then, only go to HP.com and then check if HP still supports your device under macOS 11.
Going to the HP Support site shows that the latest driver for this printer was for macOS 10.12 Sierra, which is a multitude of versions older than Big Sur. HP doesn't appear to provide anything newer. That this printer has had full functionality since Sierra would be suspect, and most likely, why it isn't supported in Big Sur.
