iTunes is only able to play content stored on an iPod when it is set up for manual management. Changing to manual management may cause what is on the device to be removed. See Recover media from an iPod - Apple Community. If you're running Catalina or Big Sur the ability to play directly from the device has been removed altogether, again reclaim the media from the device to you can play locally and choose what syncs to the device.
