It's definitely super important that your iPhone 8 is able to connect to your preferred network and stay connected reliably. Let's see what might be going on.

To clarify, it sounds like you're needing to use Wi-Fi calling because you are in an area with no cell coverage, however, your Wi-Fi calling seems to be disconnecting randomly, even though other services remain working and your Wi-Fi remains showing connected. Is that right?

If we understood the issue correctly, have you tried each step listed in this article Make a call with Wi-Fi Calling  under the 'Get help' section near the bottom of the page? Please note from that article, too, "You might need to enter or confirm your address for emergency services." If you've taken those steps already, have you been able to test your Wi-Fi calling on multiple Wi-Fi networks to see if the same issue continues? Knowing this will help isolate the behavior further.

If you are only lacking reception at a specific location, have you also contacted your carrier to see if they have coverage in that area? Sometimes there can be dead zones or areas without coverage which may be something that they can investigate for you.
