Automatic updates won't shut off (grayed out options)

This happened after the last update macOS 10.15.7

I can't turn off Auto update in the Software panel of System Preferences. And the options to check for updates, download, install, etc are locked. I'm an administrator on this Macbook Pro and I also tried the local admin account, but same result.

Has anyone else experienced this issue?

I reset the PRAM and SMC, rebooted, safemode, tried two other user accounts.

Is this a work computer, or is it managed by your employer?

I am an administrator on my work computer but the employer can push OS and Security updates over the air and the users cannot prevent that. My work computer has a similar setup in Software Update with some items grayed out or not changeable by the user (even if administrator).

Until this past year, we were able to indefinitely defer updates, but not any more.
