Using Time Machine to revert Applications Folder to a previous state

Hi, I'd like to know how I can (using Time Machine) restore to a previous state (with macOS Big Sur, MacBook Air M1).


I did a Time Machine backup before installing an App. I want to return to the state before the App was installed. I tried booting in recovery mode and restoring from backup, reinstalling OS Big Sur, and using the Migration Assistant---but the App is still in the applications folder each time.

Erase the volume and restore a backup from before it was installed.
