my Favourite Bookmarks no longer have the colored icon. They're all greyed out

What you describe is true for Safari 14.1.1 on Big Sur, but not for Safari 14.1.1 on macOS Mojave, which retains the blue globes for individual Bookmarks in the Favorites panel. This change is permanent on Big Sur with Safari 14.1.1.
