convert itunes to mp3 on my windows computer

When I try to convert my itunes to mp3 I go to convert but none of the options are highlighted

so I can't select mp3 what should I do to get the convert options highlighted?

See Convert music file formats in iTunes on PC - Apple Support. You cannot convert content that is in the cloud, comes from an Apple Music subscription, or is otherwise protected with DRM.

Most of my music is from CD's and the rest I purchased from the Apple store.

Is there someway I can get it out of the cloud so I can convert it?

Your ripped CD tracks would only be in the cloud if you had a subscription to Apple Music or iTunes Match. You can download cloud content if required.
