How to disable iCloud as 'default account' in Notes?

I recently picked up one of the new iMac's and my notes app automatically synced up with iCloud. On my MBP I'm able to switch the default account under preferences in notes to 'On My Mac', however on the new iMac 'iCloud' is the only option. I prefer to have the notes on my computer only be on my computer, and not on my iPhone and vice versa essentially.
