WiFi symbol not showing up on iPhone

My WiFi symbol is not showing up. I have erased this phone to factory reset and it shows up when I restore it to out of the box but if I restore it using my back up it doesn’t. Also there was a back that I did not initiate at 10.28 am today . Is that normal for the phone to automatically back up in the middle of the morning? I am concerned that my phone may be hacked . The vpn switch also keeps turning off and on and won’t stay on one setting . If I go in and I turn WiFi on and off the icon will show up for a second or so but then goes away .
