I am creating new sheet every month, i want to save as a pdf the latest sheet from the same bunch of sheets, when i try it just saves all of the sheets. Is there a way around this or have i confused everyone. I'm updating it on the phone and creating the pdf from the desk top.

Instead of File > Export to > PDF ... (which exports all sheets)
try
File > Print > Print ... and choose Save as PDF from the 'PDF' dropdown.
That will result in a PDF for that sheet only.
