So I can connect 1 or the other but not both via DVI->USB-C. If I connect and boot 1 or the other it is fine, however if both are connected the 2nd monitor isnt detected.

The new Mac Mini only supports one monitor from a USB-C port and one from the HDMI port
If both of monitors only support VGA and DVI?
Then you need to connect the second to the HDMI port using an HDMI to DVI adapter.

Also note that some aftermarket HDMI to DVI adapters will work and some will not.

yes monitor A) Apple Cinema 23, monitor B) Dell 24 FPW, I will get the adapter and try again. I guess I have an extra DVI-->USB-C cable now
