Factory Reset of Old (Still Working) MacBook Pro

If I factory reset my Mid 2012 MacBook Pro, will it try to install Big Sur, or the last OS it was compatible with? The computer works fine but I'm worried it will be inoperable if it gets stuck trying to download a newer OS... will this even be a problem, and if so, how can I prevent it?

MacBook Pro 13″, macOS 10.15
