If I factory reset my Mid 2012 MacBook Pro, will it try to install Big Sur, or the last OS it was compatible with? The computer works fine but I'm worried it will be inoperable if it gets stuck trying to download a newer OS... will this even be a problem, and if so, how can I prevent it?

You're correct, that's my mistake for posting here. The question form suggested that I post in High Sierra and I didn't think to double-check my current OS. However, my question still stands if you're able to help me out: Will Catalina 10.15.7 appear during the factory reset or will Big Sur?
Big Sur will certainly not appear.
Catalina 10.15.7 is the latest version of macOS you can install.
