I am 15 and my parents and I are trying to change my role from child to adult in family sharing because I have my own card that I’m trying to use to buy my own things. How do I stay in family sharing while being able to buy my own things with my own card and without any restrictions?

You cannot. When in Family sharing all purchases are charged to the Family Organizer's payment method. Regardless of wether your are an adult or not.
You can buy iTunes Gift cards and redeem them to your account and the system will use that balance to pay for items before charging the organizer's payment method. However, the purchase may still need to be validated by the organizer or their card verified.
Outside of that, if you really want to use your own card, then you need to leave family sharing.
