Back up and reformat from "Case Sensitive" to "Case InSensitive"

I need to back up (and then reformat) my macbook pro from a "CASE SENSITIVE" formatted start up hard-drive to a "CASE INSENSITIVE" hard drive. (Turns out many programs - like Adobe and Avid - won't install on a case-sensitive start up hard drive.) Any advice on making the conversion?

Recover all files from a Time Machine backup - what is the correct sequence for Monterey I want to help a friend with an Intel Mac do a complete system recovery using Time Machine from the Mac OS Recovery environment. I've provided a bootable USB installer in order to minimize time spent downloading Monterey. I've been looking at Apple's support document for Monterey - HERE. When I'm in the recovery environment for Monterey, I see the usual 4 options. However, the Apple Support document clearly states: You must first install Mac OS before you can restore from a Time Machine backup. But if I click on Restore from Time Machine in the Monterey recovery environment, I'm immediately told that it will first erase my internal hard drive. Is there something I'm missing here? Why would I start up from my USB media, install Mac OS, click on Restore from Time Machine backup, and have my internal disk immediately erased? Wouldn't it make more sense if immediately after clicking Restore From Time Machine, the disk was erased, and then macOS Monterey was installed? I know how to erase the internal disk using Disk Utility, install Mac OS and then use either Setup Assistant or Migration Assistant for user files and apps. But I was hoping Restore from Time Machine Backup would involve less user interaction for my friend. As it stands, I'm not sure what purpose the Restore from Time Machine Backup option serves. If my friend first chooses Install MacOS Monterey as per the support document, my recollection is that they will immediately go into Setup Assistant after the installation completes. Erasing the correct drive Mac Pro 2019, need to migrate files from a Mac Pro 2013. No room on the 2019 Hard drive so I have to erase it as I don't need what's on it. I need to make sure I erase the correct drive here are some screenshots as the drive is called 11.5 so I assume I erase that in the screenshot?

Using a Samsung T7 2TB SSD drive with Apple Macbook Pro M1 2021 - what format should I be using? My old Macbook Pro Retina (mid 2012) ran fine with T7 drives but I have had real problems with my new 2021 M1 Macbook Pro - very, very slow performance. I gather that the formatting of the SSD drives as supplied is not really compatible with the Macbook and that I need to reformat the discs. Apple seems to offer two Apple options in the Disc Utility programme one off which is identified as case sensitive. What does case sensitive mean and which should I use? I want to use the drives for storing pictures and for Time Machine backups. Thanks
