At first it is working then after a couple of screen shots it then shows the message:
I also checked sharing and permissions and it shows I have custom access:
However, when I check the folders inside the sharedrive, I do have read and write access.
Does anyone know how to fix it?

How is the external SSD formatted? Are you able to save files there using the Finder or other applications?
Try adding Screenshot to the list of "Full Disk Access" applications in System Preferences->Security & Privacy->Privacy.
The application itself is in /Applications/Utilities.

Could it be as simple as unchecking Put hard disks to sleep when possible.
In older macOS's this option was under System Preferences> Energy Saver.
In Big Sur it is different.
I think it might be System Preferences> Battery or something like that.
I don't have an ExFAT drive to test. Are you saving the screenshots at the root of the drive, or a folder therein?
What are the permissions for that folder? Do you have "Ignore ownership on this drive" selected or not?
What does it say at the bottom of the Get Info window regarding permissions: "you can read and write" or something else?
I tried setting the location of screenshots to a folder in a thumb drive, formatted as FAT32 (not ExFAT) and it worked, so I suppose it should work with ExFAT as well.
Also, I tried it with and without "Full Disk Access", so that should not be the problem either.
Sorry, it seems that "Ignore ownership on this volume" is not an option in FAT or ExFAT drives.
In APFS or HFS+ drives, it appears at the very bottom of the Info window (it would appear below the "You have custom access").
I tried saving both to root drive and a folder and it still says the same error.

Its formatted as ExFat, yes I can also save files in the SSD.
I had added screenshots in full disk access and it still does not let me save directly to the SSD.
