How to change fonts while writing an email on my iPad ?

There is no way to change fonts in the default Apple iOS Mail app.

There are other third party email client apps that do have this feature to both change fonts and accept installed third party fonts, if this is what you prefer.

Many third party email client apps in the iOS App Store that will allow this.

in addition to that then if you do use a 3rd party font and mail somebody a mail using that font,

and the receiver does not have this font on their device, it will just revert to their default mail app font.
