Printer not coming up as a printing option
The printer is connected, and I can use it to scan, but it doesn't come up as an option when I try to print.

Hello,
Have you tried resetting the printing system and re-adding the printer?

For USB, do you have the latest drivers from Epson (somewhat different drivers may be offered from different regions)?

This Apple document, About AirPrint - Apple Support , indicates that your model is AirPrint compatible.
Go to the System/Printers & Scanners preference pane, Control (right) - click on your printer and select "Reset Printing System" from the contextual menu. Then add your printer back with the wireless/AirPrint option.
Thanks again, but there's no question about it being compatible. As I said, I can scan with it; the printer just doesn't come up as an option when I try to print. So, yes, it's in preferences, it's the default printer, etc. But it's not listed when i try to print.
I'm not trying to print wirelessly until I get it to work when cable-connected.
There are reasons to want to connect via USB - ok. Though, finding the right, compatible and functioning Driver to make it functional could be troublesome versus Airport and not drivers required. All a question of preferences.
According to Apple Support Page - this printer is AirPrint Compatible and not drivers are required.
And This Apple Support Document will walk you thought Setting it up as AirPrint
As few more details as in make, model and how it is connected to computer ??
Thanks for the reply. It's an Epson WF-2830 connected by USB cable.
