I have an AirTag on my dog collar so that I can track him if he goes walk about off the property. However, if I go out of town then my husband can’t track him because the AirTag is on my iPhone. How can we share so that my husband can also see him?

You don’t.
Airtags are connected to a single Apple ID.
They are not meant to track animals.
If the airtag is away from you for an amount of time, around 18 hours, it will begin to beep.
I’m not sure your dog wants to hear that.
