On my iPhone I am using a family shared subscription to use Apple Music, I am currently signed in as my mum on my iPhone but on my own account on my Mac and iPad. How do I switch the Apple Music account on my iPhone to mine?

You would need to sign out of your mother’s Apple ID on your iPhone and sign in with your own.
Apple ID’s should not be shared for any reason.
Go to Setting->Account(top of settings), and scroll down to the bottom to Sign Out. The. Sign in with your own account.
Same for Media & Purchases in that same screen.
Do note, Apps downloaded with your mother’s Apple ID will continue to require her password to update.
