Running Big Sur 11.4 on a 21" iMac
Several emails each day do not match the "preview" of that email in the preview pane. I've tried quitting, restarting, shutdown, and start and none of these address the mix-up.
Here is a typical example:

Try Rebuilding the Mailbox.
Select it in the mailbox list, then Mailbox > Rebuild
