How do you know if someone is hacking into your phone viewing what your doing and how can you remove it?

You really don’t need to check if anyone has hacked your iPhone. Do you have reason to believe that someone malicious had access to your unlocked iPhone and was able to potentially install software on it without your knowledge? Or would anyone with a very high budget be extremely interested in directly targeting you? If not, then you simply don’t need to worry about malware on iOS devices.
However, there is still an epidemic of scams out there, which make ridiculous and false claims about your devices, financial matters, etc. Make sure you know how to spot them, because it’s not always easy: https://support.apple.com/en-ca/HT204759
And to answer your original question, there is no easy method of checking your iPhone for malware or other security threats. But again, these threats don’t really matter to an average iPhone user.

Did you leave your phone unlocked and with someone else for 30 minutes or more?
If not, it isn't hacked.
